Curt originally had this on another web site and then we printed it in one of the issues of the club newsletters in 2006.

Hotwired's Walleye Cheek Chowder


1/2 cup chopped onions
2 1/2 cups diced potatoes
1 cup chopped celery
1 cup chopped carrots - thin
2 tsp. salt
1 cup milk
1 cup light cream
1/4 tsp. pepper
4 slices bacon
1 lb of walleye cheeks (cut smaller if desired)

* Fry bacon & keep drippings
* Cook potatoes, carrots & celery in 2-3 cups of water until almost tender
* Cook onions in bacon drippings
* Add onions, cheeks & crumbled bacon to vegetables and water and simmer
   10 minutes, add salt & pepper
* Stir in milk & cream
* Bring back to simmer for 30 minutes stirring occasionaly

If you want more liquid add half and half
If you want it thicker do the gravy corn starch trick

This will be the Thanksgiving soup of the day. Dinner is tomorrow and not today but it is still a family event.

That sounds like a good way to use up the cheeks that have been saved for the season. I hope to try it with some of those larger fillets some day soon.

Actually, I use cheeks and some fillets. I did not follow the recipe, except as a basic outline. Major change was I added some frozen corn and some cream corn.

It was a hit at the dinner yesterday.

Froze the leftovers for a party coming up this Saturday. It will be all gone before the Kid's Christmas Party.

Now you started it. I have a craving for my fish stew. But it calls for Walleye Hog for a good batch. This wasn't a hog year for me. I am out of hog. I sure would like to make a big batch.
