Hey guys check out this  recipe  great for the holidays  ,ice fishin  and after hunting..   take a big (gallon size works best) glass jar or jug....put in 2 lbs fresh cherries  1  and 1/2  lbs of sugar   and 1 half  gallon of  the bourbon whiskey  of your choice .. shake jar until sugar is disolved ..put it on the shelf  until   thanksgiving   thats when you   scoop out some cherries an eat them....then on christmas  you bust out the bourbon..whatever you dont finish save for ice fishing and  after a good hunting trip..around the fire... just remember  it will taste like cherry juice  but after a few shots it will kick yer butt  bigtime...and each cherry you eat  will be like doin a shot also...i hope you all enjoy  this i have been makin this for 25 yrs  and its always a big hit around the holidays  but you have  to make it now  when the cherries are in...oh ya we call it cherry bounce because  after you make it the cherries will move up and down in the jar  from day to day  (bouncing )   we  have also  made this with vodka..and  have dipped the cherries in a chocolate fountian its all good..                                                            good fishin    capt. andy

I have always speculated that my BioChemistry degree would come in handy for more than just teaching...I just never assumed I would be able to use it on a walleye web site! LOL:D

What basically happens is that grapes (hence wine) and cherries have a fungus growing on them (the slightly chalky white powder coating). This fungus is called Botrytids Cinerea. There is a certain enzyme in this fungus that can break down some of the carbohydrate bonds found in sugars (yielding ethanol and CO2), particurally dextrose which is the "corn sugar" found in whiskey and bourbon distillation. By adding MORE sugar (allbeit a different compound) to this mixture, the fermentation process is allowed to carry on further because of the active ingredient found on the skin of the cherries (like yeast in beer brewing).

Basically, you wind up with a liquid that is about 130 proof (65%) alcohol, but it tastes like cherry Kool-Aid. This last observation comes from personal experience, not out of a textbook!;)

I guess rum would work just as well. If I'm not mistaken, rum is distilled from the sugarcane plant, which is just like adding more table sugar (sucrose). Sucrose and dextrose are very similar in composition (both containing 6 carbons in a cyclic arrangement), so I'm guessing the end result would be about the same, but only WAY sweeter and thicker (like syrup) because you are adding more sucrose to a liquor that is allready sucrose based.

Maybe if dextrose "sugar" (found at ANY brewery supply house) was added to rum which contains sucrose, the end result would be the same.

Of course, talk is cheap...there's only one way to find out. I've always told my students that the true scientific method is based on hypothesis, observation, and results. I say let 'er rip with the rum, and tell us how it comes out!

Yes, I made 2 quart jars with bourbon and 1 quart jar with Capt. Morgan Spiced Rum.

Loretta said her father used to leave the pits in and since it was a pain in the butt to take the pits out I went along with her recommendation.

we  tapped into a gallon jar of the vodka bounce at my halloween party..every loved it to say the least...cant wait til thanksgiving.... hey bob  hows the rum version doin?

I already have thought about it when I saw the nice cherries showing up at the market last week. Still have some left from last year so I will wait until making some more.

Right on Alex, we have been making some with vodka it seems a little smoother and also if you get a chance to pick some cherries they seem to be a little more firm at thanksgiving when you bust them out. Somtimes when i get them at the store they are not as fresh.
